The story

From engineer to pizzaiolo

Sub Rosa started with Dom Morton, an ex-engineer who taught himself to make pizza and got a wee bit obsessed. The result: a pizzeria tucked away up a ramp in an industrial estate on the edge of Castlemilk. It's not where you'd expect Glasgow's buzziest pizza, which is sort of the point.

Two styles, done properly. New York: 16 inches, thin, crisp and made for folding. Detroit: baked in steel pans with that crunchy, lacy cheese crown. Everything else is made in house, from the sauce to the scotch bonnet honey.

Word got out fast. Now there's a second kitchen at Inn Deep, the craft beer bar in the railway arches at Kelvinbridge.
